Grilled Fish Recipes
Dave Text asked:

Salads are nutritional and can be the great source of vitamins, proteins, carbohydrates, minerals and lot more. They are considered as light meal and much more than an appetizer. Their preparation mostly involves vegetables (leafy vegetables) and sometimes fruits. The dressing forms the crux of it, which differentiates the taste of different salads. Occasionally it is prepared with meat, fish cheese or nuts, which makes it a high calorie-content. Basically these delicacies are healthy with low calories, most commonly found on every dining table in US

The most commonly consumed green salad consists of variety of vegetables like lettuce, spinach or arugula. This is not all, as the recipes can also be seen with tomato, cucumber, peppers, mushrooms, onions, spring onions, and red onions, carrot and reddish. We come across people who love to try different things in their daily diet they make different combinations in the same dish to give it different taste and flavor. For this reason we find green salads complimented with pasta, olives, cooked potatoes, croutons, beans, rice meat, cheese and fish. That is why salad is not just any mixture of leafy vegetables but needs proper garnishing and serving with of course the right mix of ingredients.

There are wide array of sumptuous chicken and summer salad recipes with tantalizing taste and mouth-watering aroma.

Lets look at one of the recipe called Chinese chicken salad recipe which easy to prepare and tasty to eat. The almonds and noodles in the salad add a crunchy taste to it and the dressing makes it spicy and sweet. Take a quick look at the ingredients needed.

Chinese chicken salad

Ingredients:

Coleslaw

1 packet of chicken noodles
1/2-cup of chopped green onions
Few sliced almonds to add crunch
4 skinless, boneless chicken breasts

Dressing essentials:

1/2 cup of sugar
1/2 cup of olive oil
Wine vinegar or same quantity of rice preferably 1/2 cup rice
2 tsp. of soy sauce
Seasoning from the ramen

Method

To start with the Chinese chicken salad, you need to bake/grill and cube the 4 chicken breasts properly. Once this is done you have to combine all ingredients together. When the ingredients are mixed properly put the dressing on it immediately before serving.

During summer the intake of regular diet is less but the salads with nice dressings and variety of toppings can actually work as appetizers. The summer salad recipe involves fresh vegetables. Just go through the recipe to find out more about it.

Grilled Fish Recipes
Barbecue Smoker Recipe Man asked:

Not so many moons ago I wrote an article entitled “How To Have The Perfect Barbecue” in which I lambasted most of my friends for burning food on the BBQ and shared my essential tips for ensuring a perfect barbecue every time. An alternative way to put it is “How to BBQ without flames” because the secret to charcoal cooking (and indeed gas barbecuing) is sizzle and not flames.

The fat in the food is mobilised in the heat, drips onto the charcoal which creates the smoke to flavour the food. What we want is to hear the sizzle but no flames because flames will char the outside of the food leaving us at best eating something semi raw and at worst in bed with food poisoning. Easy huh?

Well it is quite easy if you’ve got a barbecue grill with adjustable rack height but if you’re the true outdoor type travelling light you may well have a disposable charcoal barbecue tray. If you’re not familiar with the disposable barbecue grill it’s essentially an aluminum foil tray filled with lump wood charcoal and a light mesh cover. On top of the charcoal is a fuel impregnated mat which once lit is all that’s needed to get the grill going making them ideal when travelling light or for cooking whilst on a picnic. One thing is clear though and that is there’s no adjustment to the height of the grill and this means being careful not to burn the food, more on that in a minute.

The main advantages to this piece of equipment is that it’s light and portable, it’s really quick to get going and also really cheap so for a few dollars more you can really add a new dimension to you picnic. Having recommended trying one of these trays I think it’s also important to point out the downsides of cooking on them so here are my essential tips for cooking on a disposable barbecue grill:-

1. Sometimes the lighting mat can fail so if satisfying your hunger is totally dependent on cooking then remember to take a firelighter as back up - and don’t forget the matches!

2. Choice of food to cook is really important because there’s not much flexibility with the heat and it doesn’t last forever. Because of the lack of flexibility, avoid fatty foods such as sausages because these will simply spray fat onto the coals and cause flare ups. As I’ve already said, the flames will burn food but it’s not just that, flames are wasted energy and your charcoal won’t last as long. Try fish and steaks and other lean cuts of meat.

3. It’s not an expensive piece of kit so don’t expect an enamel grill. The best tip I can give is to brush the grill with oil before putting any food on it and this will prevent it from sticking especially if cooking fish.

One final point; It is as it says, “disposable” so if you’ve just finished your cookout, please look after your environment and dispose of the wreckage responsibly.

Bacon-Wrapped Pork Chops With Seasoned Butter
4 6-7 ounce boneless pork loin chops, 1 1/4-inch thick
4 slices thick-cut bacon

Cooking Directions
Dry the chops with paper towels and season generously with salt and pepper. Wrap a strip of bacon around each one, securing with a toothpick. Cook as directly below to medium doneness. Remove toothpick; serve chops with a pat of butter.

Grill: Prepare medium-hot fire in grill; grill chops over direct heat for 6-7 minutes; turn and grill 5-6 minutes more for medium doneness.

GARLIC-MUSTARD BUTTER
1/4 cup butter (1/2 stick), softened to room temperature
2 teaspoons Dijon mustard
1 clove garlic, minced

In a small bowl, stir together ingredients until well mixed. Wrap in waxed paper to shape like a stick of butter. Chill while pork is cooking.

When ready to serve, cut into fourths and top each pork mignon before serving.

*what about the bacon should I par bake it before grilling and add to the pork?
*should I brin the pork?
