the fries really are great. the important thing is to work in small batches and keep all the fries in the pan in contact with the bottom. Try and get all the fries browned on at least 3 sides. Trust me, they are pretty great.

Are the fries crispy that way? I’ve found that soft fries are inevitable unless you deep fry. If the whole pan technique works then I’m sold.

I think it would work on some other simple steak like a sirloin, but I’ve never tried it on chicken. If you do, let me know. I should work on short ribs. good luck. RB
